Locally produced food is becoming more and more common. More restaurants and groceries are providing local food. Although not mentioned in the video, this means less need for preservatives, especially sodium. It means the food is more likely to have a favorable potassium sodium ratio. In the past it was almost impossible to get a high ratio meal eating out. Although still difficult, it is possible at some restaurants today.
